A Thirsk-based cheesemaker has won a contract to supply its produce to the Bay Restaurant Group.
In addition, Shepherds Purse’s Yorkshire Blue will be featured in two recipes on the Slug and Lettuce’s spring and summer menus, reports the Business Desk.
There are 94 Slug and Lettuce premium wine bars around the UK that will be serving the dish, using Shepherds Purse’s cheese.
Development chef at the chain, Antony Bennett, told the news site: “We chose Yorkshire Blue for the new spring/summer menus in Slug and Lettuce bars because it offers a sweet flavour that delivers what you would expect from a typical blue cheese, a mellow sharpness with a soft creamy mouth feel.”
He added that the 100 per cent cow’s milk cheese has “good melting properties”, which makes it an ideal ingredient in recipes for soups and cream-based pasta sauces.
Last December, Shepherds Purse’s Yorkshire Blue cheese won the ‘Gold Award’ in the Caterer Group’s Excellence in Food and Drink Awards 2007.
The firm was also praised for its excellence in the ‘Cheese, Dairy and Milk’ category and previously its produce has been served in the House of Commons, as well as on Eurostar menus.
